Guest guest Posted December 3, 2000 Report Share Posted December 3, 2000 I have this one but not the salsa one: * Exported from MasterCook * Tomato Wine Sauce Recipe By :Moosewood Restaurant Low-Fat Favorites, page 350 Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 cup finely chopped onions (about 1 medium onion) 2 medium garlic cloves -- minced or pressed 1/4 teaspoon salt 2 teaspoons ground fennel 1 teaspoon dried oregano 1 teaspoon dried basil 1/3 cup red wine 3 cups undrained canned tomatoes -- (28-ounce can) salt and ground black pepper -- to taste Makes about 3 1/2 cups. Total time: 40 minutes. Our favorite simple tomato sauce-useful, highly flavorful, and velvety smooth. Fennel is the surprise touch here. We're not sure why, but something about its unexpected flavor often fools people into thinking that this is a meat-based sauce. Ladle over Stuffed Manicotti Verde, Mushroom Spinach Crepes or Mushroom- and Spinach-stuffed Zucchini. In a saucepan, warm the olive oil. Add the onions and garlic, sprinkle with the salt, cover, and saute on very low heat for 5 to 7 minutes, or until the onions are beginning to soften. Add the fennel, oregano, and basil and cook for another minute. Pour in the wine and bring to a boil. Whirl the tomatoes in a blender until just pureed and add to the pan. Cover the sauce and simmer gently for about 20 minutes, stirring occasionally. Add salt and pepper to taste. NOTE: Because these are such useful all-purposes sauces, you may want to double the recipes-but no need to double the oil. The 2 teaspoons will be enough! Tightly sealed, they will keep refrigerated for at least a week and frozen for several months. Per 2-oz serving: 25 calories, .7 G protein, .8 G fat, 3.4 G carbohydrates, ..1 G saturated fatty acids, .1 G polyunsaturated fatty acids, .5 G monounsaturated fatty acids, 0 MG cholesterol, 118 mg sodium, .2 G total dietary fiber.
