Fresh Tomato Salsa

Amount Measure Ingredient -- Preparation Method

3 cups diced tomatoes

1 small fresh green chile -- minced, seeds removed

1 tablespoon fresh lemon or lime juice

1 tablespoon minced fresh cilantro -- may be doubled

salt and black pepper -- to taste

 

Combine all of the ingredients in a mixing bowl and serve at room

temperature.

 

TOMATO PINEAPPLE SALSA (variation): Replace 1 cup of the diced

tomatoes with 2/3 cup fresh or unsweetened canned pineapple chunks.

Also add 1 tbs cider vinegar and 2 tsp grated ginger root.
