Thanks, Hope. It's so funny that you should mention that. When I saw

the photo, I thought, Wow! This never looked that good when I made

it! LOL! I came up with the recipe in one of my desperate attempts to

find something my picky stepsons (non-veg) would eat. When I make it,

I plop a chimichanga on a plain 'ol plate (often paper) and tell them

to come and get it. The carton of sour cream and stuff is on the table

(often on paper plates). ha ha!

Sorry if I ruined anyone's vision of these nice beautiful dinners you

thought I was having.

I've had another recipe published in Southern Living magazine (the

recipes are also included in their Annual Recipes Cookbook) and online

as well. This one is for Bean and Cheese Chimichangas. I got a full

page photo this time too! To see the online version, go to:

http://www.southernliving.com/food/chimichangas.asp for the recipe

itself. The page before has a larger photo (the one that was in the

magazine): http://www.southernliving.com/food/count_of_two.asp

Also, this page: http://www.southernliving.com/food/info.asp lists the

Top-Rated recipes of 2000, and my recipe for Glazed Fall Vegetables is

included under October 2000.

Enjoy!

Karen, that's great! And the photo is beautiful--I'll bet when you eat after

work your table looks just like that! :)

Pat yourself on the back for a job well done. It's a good feeling to be

chosen by food editors as having a good idea, isn't it? Then there's

getting your writing showcased. Congratulations! Hope
