Chocolate Chip Bundt Cake with Orange Blossom Glaze

3 cups whole wheat pastry flour

1/2 cup yellow cornmeal

1 1/2 teaspoons baking soda

2 teaspoons nonaluminum baking powder

1 teaspoon ground cinnamon

1/2 cup dairy-free chocolate chips

1/3 cup chopped almonds

1 12.3 oz package lite silken tofu

1/2 cup unsweetened applesauce

1 1/2 cups evaporated cane juice

1/2 cup enriched vanilla rice milk

1 teaspoon almond extract

Glaze frosting

3/4 cup sifted powdered sugar

1 1/2 to 2 tablespoons orange juice

1/8 teaspoon orange blossom water

1/8 teaspoon almond extract

 

Preheat oven to 350F. Spray 10-inch Bundt pan with oil.

 

For the cake: Combine the flour, cornmeal, baking soda, baking powder, cinnamon,

chocolate chips, and almonds in a large bowl and set aside.

 

Place tofu in a food processor and blend. Add applesauce and evaporated cane

juice; blend. Add rice milk and almond extract and process until smooth. Make

a well in the center of dry ingredients and quickly fold in the tofu mixture.

Pour into prepared pan. Bake 40 minutes, or until tester comes out clean. Cool

in pan 15 minutes; then turn onto cooling rack. Set aside.

 

For the glaze: Sift powdered sugar into a medium bowl. Add 1 1/2 tabespoons

orange juice and the remaining ingredients and stir to blend. If the glaze is

too thick, add a little more orange juice, measured by the teaspoon. Drizzle

glaze on cooled cake.
