Guest guest Posted December 21, 2000 Report Share Posted December 21, 2000 * Exported from MasterCook * Marinated Mushrooms With Tarragon Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 112 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 garlic cloves Salt and coarsely cracked pepper 4 scallions -- up to 6 including some of the greens -- thinly sliced 2 1/2 tablespoons red wine vinegar 4 teaspoons chopped tarragon OR 1/2 teaspoon cumin seeds 1/4 cup extra virgin olive oil 8 ounces white mushrooms -- stem ends trimmed 2 pinches red pepper flakes SERVES 3 TO 4 This easy dish can be assembled up to 2 hours in advance. A great appetizer, these mushrooms are also good tossed in a spinach salad. When fresh tarragon isn't available, cumin makes an excellent alternative. Finely chop the garlic with 1/2 teaspoon salt, or smash it in a mortar until smooth. Combine with the scallions, vinegar, and tarragon in a bowl, then whisk in the oil. (If using the cumin, toast the seeds in a small pan until they smell fragrant, then cool and grind to a powder. Unless the mushrooms are very small, cut them into quarters, slightly angling each cut to make a more interesting shape. Pour the dressing over the mushrooms and toss with the pepper flakes.
