Guest guest Posted December 28, 2000 Report Share Posted December 28, 2000 * Exported from MasterCook * Pasta with Spicy Eggplant Puree Recipe By :Molly Katzen Serving Size : 6 Preparation Time :1:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium eggplant a little oil -- for baking 2 medium garlic cloves -- or more to taste 1/4 cup fresh lemon juice 1/4 cup sesame tahini 1/2 teaspoon salt freshly ground black pepper crushed red pepper -- to taste 1 1/4 pounds spaghetti, linguine, or fettuccine 3 tablespoons olive oil -- or more if needed Preheat oven to 350 F. Lightly oil a baking sheet. Slice the eggplant in half lengthwise, and place the halves open side down on the baking sheet. Bake for 30 minutes, or until very tender. Cool to the point at which the eggplant can be handled comfortably. Meanwhile, put up the pasta water to boil. Scoop all the eggplant pulp from the skins. Place in a blender or a food processor fitted with the steel blade, along with garlic, lemon juice, tahini, and salt. Puree until smooth. Transfer to a large bowl, and season to taste with black and red pepper. Cook the pasta in plenty of boiling water until al dente. Drain and add to the bowlful of eggplant puree. Immediately drizzle with olive oil. Use tongs or two forks to mix with a lifting motion, bring up the puree from the bottom of the bowl until everything is nicely combined.
