Roasted And Marinated Green Beans W/Onions & Garlic Cloves

3 tablespoons olive oil -- up to 4

1 pound fresh green beans

cleaned and trimmed and patted dry

1 medium-sized yellow or red onion

cut in thin slices or rings

6 medium-sized garlic cloves -- up to 8

peeled and halved lengthwise

1/2 teaspoon salt -- scant 1/2 teaspoon

1 tablespoon balsamic vinegar -- up to 2

freshly ground black pepper

 

Preparation time: 10 minutes. To prepare, 20 to 30 to bake. Yield: about

4 servings.

 

Here is a fine alternative to steaming or sauteing green beans. Just roast

them in the oven on a lightly oiled tray. The flavor and texture will be

so enhanced that only minimal additional seasoning will be necessary to

make this a special and delicious preparation.

 

You can experiment with roasting other vegetables as well: carrots cut into

matchstick pieces, broccoli stalks, cauliflowerets, whole asparagus,

mushrooms. Try a combination. Snow peas also taste wonderful cooked this

way. They take considerably less time to roast, so add them during the

last 5 minutes if your cooking them in combination with other vegetables.

 

NOTE: The recipe calls for medium-sized cloves of garlic sliced in half

lengthwise. You can also use small ones and leave them whole. If you

can't get balsamic vinegar, use champagne vinegar or some fruity

variety. If none of these is available, cider vinegar or red wine vinegar

will also work.

 

1. Preheat oven to 400F. Brush a large baking tray with 2 tablespoons

olive oil.

 

2. Spread green beans, onions, and garlic on the tray. Salt lightly, and

drizzle with another tablespoon or two of olive oil.

 

3. Bake the vegetables for 20 to 30 minutes, interrupting several times to

shake the tray or stir briefly. After 20 minutes, taste- test a green bean

to see if ifs done to your liking. The baking time is somewhat flexible.

 

4. When all the vegetables are tender, remove from the oven and transfer

to a bowl. Drizzle immediately with vinegar. Apply freshly ground black

pepper to taste.

 

5. Serve hot, at room temperature, or cold.
