Guest guest Posted December 28, 2000 Report Share Posted December 28, 2000 * Exported from MasterCook * Cauliflower With Cumin And Cheese Recipe By : Still Life with Menu (1994), Mollie Katzen, page 35 Serving Size : 4 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups small cauliflorets (approximately 2 small heads cauliflower) 1 cup thinly sliced onion 3/4 teaspoon whole cumin seeds 1 tablespoon extra virgin olive oil -- up to 2 1/4 teaspoon salt -- up to 1/2 1 tablespoon cider vinegar 1 small garlic clove -- finely minced 1 cup mild white cheese cubes -- the size of dice (Monterey jack or something similar) 3 tablespoons sour cream -- up to 4 OR yogurt or a combination freshly ground black pepper -- to taste Preparation time: 30 minutes. Yield: 4 portions depending on what else is served. This tasty salad has a range of applications. It can accompany the most elegant of meals, and it also makes a great snack. It's all right to make it a day or two ahead of time, if that's more convenient for you. It will keep well. 1. Steam the cauliflower until tender (this should take about 5 to 8 minutes, depending on the size of the pieces), and refresh under cold running water. Transfer to a medium-sized bowl. 2. In a small skillet, saute the onions and cumin seeds in oil with salt over medium heat until the onions are very soft (5 to 8 minutes). 3. Combine all ingredients, mix well, and taste to adjust seasonings.
