Chinese Sweet and Sour Tofu Balls

Tofu Balls

12 ounces soft tofu -- mashed

1 tablespoon creamy peanut butter

1 tablespoon soy sauce

1/2 cup flour

1/2 cup green bell pepper

1/4 cup button mushrooms -- sliced

4 scallions -- finely chopped

Sweet and Sour Sauce

1 cup unsweetened pineapple juice

6 tablespoons honey

6 tablespoons apple cider vinegar

2 tablespoons soy sauce

1 1/2 tablespoons cornstarch

1/4 teaspoon garlic powder

 

Yields 14 to 16 balls.

 

In a lare mixing bowl, stir together the peanut butter and soy sauce.

 

Add the mashed tofu, stirring well.

 

Add the flour, green pepper, mushrooms, celery, and scallions, and stir until

well blended.

 

Form the mixture into 14 to 16 small balls, approximately 1 1/2 inches in size..

 

On a lightly oiled baking dish, arrange the balls and bake at 350F oven for 20

minutes.

 

Turn the balls over, and bake for another 20 minutes.

 

In a medium saucepan, whisk together all the sauce ingredients until thickened

and well-blended.

 

Serve the tofu balls warm, with the sauce on the side for dipping.
