Karin Baumgardner Issaquah, WA * Exported from MasterCook * Oven-Baked Brown Rice with Mushrooms - New Joy of Cooking Recipe By : All About Vegetarian Cooking (Joy of Cooking) Serving Size : 4 Preparation Time :0:00 Categories : Joy Of Cooking--Vegetarian Rice Vegetarian Want To Try Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons butter -- or olive oil 1 1/2 cups mushrooms -- chopped 12 cups onions -- chopped 1 clove garlic -- finely chopped 1 cup long-grain brown rice 1/8 teaspoon black pepper 2 1/4 cups vegetable stock 1/4 teaspoon salt Preheat oven to 350°F. Melt butter in a 2-quart stovetop-to-oven casserole over medium-high heat. Add mushrooms, onions, and garlic, and cook, stirring, until the mushrooms are lightly browned, about 8 minutes. Add rice and black pepper and stir until coated. Add stock and salt. Bring to a boil. Cover and bake until the rice is tender and the stock is absorbed, about 45 minutes. Let stand, covered for 10 minutes before serving.
