Oven-Baked Polenta - New Joy of Cooking

2 tablespoons butter -- or olive oil

1/2 cup onion -- finely chopped

3 cups water OR

1/2 water and 1/2 stock

2 cups water OR

1/2 water and 1/2 stock

1 1/2 cups yellow cornmeal

4 ounces Gruyere cheese -- thinly slivered

4 ounces mozzarella cheese -- thinly slivered

1/2 cup parmesan cheese -- grated

1/2 cup heavy cream OR

half-and-half or milk

 

Melt butter in a large saucepan over medium heat. Add the onions and cook,

stirring, until translucent, about 5 minutes.

 

Stir in the 3 cups of water (or water and stock mixture) and bring to a

boil.

 

Stir together the 2 cups of water (or water and stock mixture) and the

cornmeal. Gradually stir into the boiling liquid; cook, stirring constantly,

over low heat until the cornmeal is thickened, about 5 minutes.

 

Preheat oven to 350°F. Lightly butter a shallow 2-quart baking dish. Pour

half the polenta into the baking dish. Smooth with a spatula. Top the

polenta with half of the cheeses. Spread the remaining polenta on top and

sprinkle with the remaining cheese. Pour the cream over the top.

 

Bake until the top is browned and bubbly, 35 to 45 minutes. Let stand for 10

minutes before serving.

NOTES : In this version of polenta, the preliminary cooking can be cut in

half because the polenta finishes cooking as it bakes in the oven.
