For a sure chill-chaser, make a pot of beet borscht, a dish that has sustained countless people through bitter Russian winters. Precede it with a stack of potato pancakes hot from the skillet, served with a spoonful of warm applesauce. Fresh fruit makes an appealing conclusion: serve orange wedges if you're short on time; if not, slice the oranges and marinate them in a gently spiced syrup. The timing: Make the dessert and chill. Make the borscht and set aside.
