Guest guest Posted January 15, 2001 Report Share Posted January 15, 2001 * Exported from MasterCook * Sliced Oranges In Spiced Syrup Recipe By : Everyday Cooking with Dr. Dean Ornish, page 252 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Ornish: Everyday Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 teaspoon whole black peppercorns 20 whole cloves 8 cardamom pods 2 cinnamon sticks 2 tablespoons sugar plus 2 teaspoons sugar 1 tablespoon lemon juice plus 1 teaspoon lemon juice 1 teaspoon cornstarch 1 cup orange juice 2 large navel oranges SERVES 4 Fresh orange juice infused with an aromatic spiced syrup makes an exotic sauce for sliced oranges. Don't be put off by the quantity of spices used; the result is subtle and light. In a 10-inch skillet or other wide pan, combine peppercorns, cloves, cardamom, cinnamon, sugar, lemon juice, cornstarch, and 2 cups water. Whisk to dissolve the cornstarch. Bring to a boil over high heat and simmer until almost all the liquid has evaporated and big bubbles begin to appear on the skillet bottom, about 10 minutes. Remove from heat and add orange juice. Scrape the sides of the skillet with a rubber spatula. Cover and let mixture infuse 20 minutes or until cold. Strain through a sieve. Cut the ends off the oranges and set the oranges on one end. With a sharp knife, cut from top to bottom all the way around the orange to remove the peel and all the white pith. Slice oranges into rounds about 1/4 inch thick. To serve, put orange slices in four dessert bowls. Top each serving with 1/4 cup of the spiced orange syrup. TIP: A lot of chefs are steeping herbs in liquids to make " infusions " that add flavor to dishes without adding fat. You can infuse a liquid with spices, as in this recipe, or with herbs. Try infusing a light syrup or fruit juice with fresh mint, lemon verbena, or lavender; or infusing a savory broth with rosemary or thyme. Serving size: 1/2 orange, 1/4 cup syrup.
