Vegetable Masamba

Amount Measure Ingredient -- Preparation Method

2 tablespoons ghee or unsalted butter

1 cup diced onions

1 teaspoon ground coriander

3/4 teaspoon ground cumin

pinch ground nutmeg

pinch ground cloves

pinch ground paprika

pinch ground cinnamon

pinch black pepper

9 cups (10-12 ounces) washed, dried, and chopped fresh kale

1/2 teaspoon salt

1/2 cup diced fresh tomatoes

2/3 cup unsalted peanuts

 

In a large skillet, melt the ghee and saute the onions for 3-4 minutes or until

translucent. Stir in the next seven ingredients and

saute for 1 minute. Add the kale, stirring to coat thoroughly with the spices.

Add the salt and fold into the mixture.

 

Reduce heat to medium-low and cook, covered, for 15 minutes, stirring every 3-4

minutes. Turn off heat. Add the tomatoes and

peanuts, cover, and let stand for 5 minutes before serving. Serve
