Tofu Fudge

 

Recipe By :Giant Book of TOFU Cooking - K. Lee Evans & Chris Rankin

Amount Measure Ingredient -- Preparation Method

4 ounces soft tofu -- drained and mashed

2 tablespoons butter or margarine -- melted

1/2 cup cocoa powder

1/4 teaspoon salt

2/3 cup sugar

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 cup flour

2/3 cup walnuts -- chopped

 

Serves 4 to 6

 

In a blender, combine the tofu, butter, cocoa, salt, sugar, and vanilla. Mix

until smooth.

 

In a large mixing bowl, combine the tofu mixture with the baking powder, flour,

and walnuts. Stir well.

 

Pour the batter into an oiled 8 x 10-inch baking pan, and bake and bake at 350F

for 30 minutes.

 

Cool, and cut into small squares.
