Guest guest Posted January 24, 2001 Report Share Posted January 24, 2001 * Exported from MasterCook * Golden Stuffed Rice Balls - Arancini Di Riso Recipe By :Bryanna Clark Grogan Serving Size : 10 Preparation Time :0:00 Categories : Appetizer Grains Side Dish Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 recipe microwave yellow risotto -- chilled 2 tablespoons soymage parmesan substitute -- or soy-free alternative FILLING: 2/3 cup cold -- thick, “meaty” spaghetti sauce, such as Brian’s Wine-free Mushroom Tomato Sauce - Ragu Alla Brian -- with hamburger replacement added 1/2 cup thawed frozen petit pois (baby peas) 1 cups fine fresh bread crumbs -- (1-1 1/2) Mix the risotto with the soy Parmesan, set aside, then combine the cold sauce with the peas for the filling. For each ball, measure out 1/4 cup risotto and another 1 tablespoon, kept separate. Place the 1/4 cup risotto in the palm of one hand, and flatten it slightly. Place 1 tablespoon of the filling in the Center of the risotto. Close up your hand to make the rice enclose the filling, using the extra 1 tablespoon rice to cover the gap at the top. Form the rice firmly into a ball. (You can flatten this slightly, if you prefer.) Dredge the balls in the bread crumbs until completely coated. Place the balls on a greased cookie sheet, and refrigerate to firm up while you heat the oven to 350°F. Spray the balls with a fine mist of olive oil from a pump sprayer (like an Eco-Pump or Donvier Spray pump. Bake 15 minutes, then turn over and bake 15 minutes longer, or until golden. These can be eaten “as is” or as a snack, or served with a tomato juice. Per rice ball: Calories: 84, Protein: 3 g, Carbohydrate: 13 g. They are a popular Sicilian dish. Since they can be a bit complicated to make, I only make them when I have leftover Yellow Risotto and leftover “meaty” spaghetti sauce on hand.
