Tofu Pumpkin Mousse

8 ounces soft tofu

1 cup pumpkin puree

1/2 cup sugar or light granulated cane juice

2 tablespoons pumpkin seeds, roasted

 

In a food processor, puree the tofu until smooth. Add the pumpkin and sugar;

continue to puree until smooth.

 

Pour the mixture into an airtight container and chill for 2 hours. Serve in

individual dessert dishes and garnish with pumpkin seeds.

Tofu Strawberry Mousse

8 large strawberries, stems removed

1 1/2 pounds regular tofu

1 1/2 cups powdered sugar

6 whole strawberries, for garnish

 

In a food processor, puree the strawberries until they reach a thick, liquid

consistency. Add the tofu and blend until fully combined.

 

Add the powdered sugar; blend until smooth.

 

Pour the mixture into an airtight container and chill for 2 hours or overnight.

Serve in individual dessert dishes and garnish with whole strawberries.
