For those that prefer using clear liquid stevia you can add it to taste. I do not recommend the dark green liquid. Tanya Kirkland www.cookingwithstevia.com Stevia Coconut Ice Cream - Vegan 14 ounces coconut milk 1 cup water 1 teaspoon vanilla extract 1 teaspoon coconut flavoring 1/2 teaspoon pure stevioside (white stevia powder - go to www.CookingWithStevia.com for more information about stevia) 1/4 cup toasted chopped almonds (optional) 1. In a blender, combine coconut milk, water, vanilla and stevioside. 2. Pour milk mixture and nuts into an ice cream maker. Freeze according to manufacturer directions. 3. When frozen to desired consistency, serve immediately. Garnish with chopped nuts if desired. Makes about 8 1/2-cup servings. 1 gram of carbs per serving (without nuts) Enjoy, Tanya Kirkland Although an ice cream maker works best this is an alternative method: Pour mixed ingredients into a large rectangular pan. Freeze until solid, but not hard. Remove from pan and process in a food processor. Freeze again. Remove from freezer about 20 minutes before serving.
