Place the egg, bananas, milk, vanilla essence, flour, baking powder and sugar in a blender or food processor. 2. Process to make a smooth batter. it should have a creamy dropping consistency. If it is too thick, add a little extra milk. set aside for 10 minutes. 3. Heat the oil in a heavy saucepan or deep-fat fryer. When hot, carefully place spoonfuls of the mixture in the oil and fry, in batches, for 3-4 minutes until golden. 4. Remove with a slotted spoon and drain on kitchen paper.
