Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook * Chick-Peas, Sweet Potato And Garden Egg Recipe By : Classic African by Rosamund Grant Serving Size : 4 Preparation Time :0:00 Categories : Beans And Pulses Vegetables African Dairy Restricted Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 Tablespoons Olive Oil 1 Red Onion -- Chopped 3 Cloves Garlic -- Crushed 115 Grams Sweet Potatoes -- Peeled And Diced 3 Garden Eggs -- -Or- 1 Large Eggplant -- Diced 425 Grams Garbanzo Beans, Canned -- Drained 1 Teaspoon Dried Tarragon 1/2 Teaspoon Dried Thyme 1 Teaspoon Ground Cumin 1 Teaspoon Ground Turmeric 1/2 Teaspoon Ground Allspice 5 Canned Tomatoes -- Chopped With 4 Tablespoons Reserved Juice 6 Dried Apricots 600 Milliliters Vegetable Broth 1 Green Chile -- Seeded And Chopped 2 Tablespoons Chopped Cilantro Salt And Pepper -- To Taste 1. Heat the olive oil in a large pan over a moderate heat. Add the onion, garlic and sweet potatoes and cook for about 5 minutes until the onion is slightly softened. 2. Stir in the garden eggs or eggplant, then add the garbanzo beans and the herbs and spices. Stir well to mix and cook over a gentle heat for a few minutes. 3. Add the tomatoes and their juice, the apricots, stock, chile and seasoning. stir well, bring slowly to the boil and cook for about 15 minutes. 4. When the sweet potatoes are tender, add the coriander, stir and adjust the seasoning, if necessary, and serve. - - - - - - - - - - - - - - - - - - NOTES : Garden egg is a small variety of aubergine used widely in West Africa.
