Here's a vegan spice cake with black pepper.

Spice Cake

1/2 cup plain unflavored soy milk

1/2 cup pure maple syrup

6 tablespoons molasses

6 tablespoons canola oil

- or melted unsalted butter

1 tablespoon vanilla extract

2 teaspoons cider vinegar

1 cup whole wheat pastry flour

1 cup unbleached all-purpose flour

2 tablespoons ground ginger

2 1/2 teaspoons ground cinnamon

1 1/2 teaspoons baking soda

1 1/2 teaspoons baking powder

1/2 teaspoon fine sea salt

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1 pinch freshly milled black pepper

 

It might sound odd, but the black pepper in this recipe is a

marvelous addition to a mix of sweet spices. Just a pinch helps bring

out the spiciness and molasses flavor of the moist, dark cake. This

cake is particularly good served with a warm sauce.

 

 

Preheat the oven to 375F. Lightly oil an 8-inch-square baking pan and

dust it with flour.

 

In a medium bowl, whisk the soy milk, maple syrup, molasses, oil,

vanilla, and vinegar.

 

In a separate bowl, sift together the flours, ginger, cinnamon,

baking soda, baking powder, salt, cloves, nutmeg, and pepper.

 

Fold the dry ingredients into the wet mixture with a rubber spatula,

taking care not to overmix.

 

Pour into the baking dish and bake for 30 minutes, or until toothpick

inserted near the center comes out clean.

 

Allow the cake to cool, in the baking dish, to room temperature before slicing.
