Ellen * Exported from MasterCook Mac * Spice Cake Recipe By : The Modern Vegetarian Kitchen, Peter Berley p402 Serving Size : 8 Preparation Time :0:00 Categories : Cakes & Frostings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup plain unflavored soy milk 1/2 cup pure maple syrup 6 tablespoons molasses 6 tablespoons canola oil - or melted unsalted butter 1 tablespoon vanilla extract 2 teaspoons cider vinegar 1 cup whole wheat pastry flour 1 cup unbleached all-purpose flour 2 tablespoons ground ginger 2 1/2 teaspoons ground cinnamon 1 1/2 teaspoons baking soda 1 1/2 teaspoons baking powder 1/2 teaspoon fine sea salt 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1 pinch freshly milled black pepper It might sound odd, but the black pepper in this recipe is a marvelous addition to a mix of sweet spices. Just a pinch helps bring out the spiciness and molasses flavor of the moist, dark cake. This cake is particularly good served with a warm sauce. Preheat the oven to 375F. Lightly oil an 8-inch-square baking pan and dust it with flour. In a medium bowl, whisk the soy milk, maple syrup, molasses, oil, vanilla, and vinegar. In a separate bowl, sift together the flours, ginger, cinnamon, baking soda, baking powder, salt, cloves, nutmeg, and pepper. Fold the dry ingredients into the wet mixture with a rubber spatula, taking care not to overmix. Pour into the baking dish and bake for 30 minutes, or until toothpick inserted near the center comes out clean.
