I have tell those of you that don't know that we never to my knowledge use molasses in Australia at all and I'm pretty sure most people have not heard of them (it?). I am not even sure exactly what it is. I have never in my life heard of anyone using it! Anyway the spice cake only uses 6 Tbspns of molasses and when I found molasses today, to my surprise, it's a great huge jar! It was only $2 something so I got it anyway. (Therefore SOMEONE here does use it hehe) What sorts of other things can I put molasses into? I regularly buy Lyle's Golden Syrup -- which I LOVE. It is light in color with a very sweet caramel taste. Molasses, on the other hand, is very dark and thick with a stronger, completely different flavor. I wouldn't interchange them in recipes. I think I've posted my recipe (from Rose Elliot) before but if you can't find it in the archives I'll send it again. I also use it in bread and cakes. If you're in a health food shop, look out for molasses mints (not sure if they're vegan, though). They're really yummy. Some shops in Melbourne sell them, but they're not very common. Jo.
