Guest guest Posted February 16, 2001 Report Share Posted February 16, 2001 * Exported from MasterCook * Chopped Salad With Feta Dressing Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 163 Serving Size : 1 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 scallions including some of the greens 1 red bell pepper 1 cucumber -- peeled if waxed halved and seeded 1 celery rib 12 cherry tomatoes -- halved 1/4 cup chopped parsley 10 Kalamata olives -- pitted and chopped Feta Dressing with Marjoram and Mint (see separate recipe) 1 avocado -- diced Salt and freshly milled pepper About 2 cups This makes a stunning little salad that's fast and easy to make. For an especially handsome effect, use yellow or mixed-colored tomatoes and purple basil. Look for small Italian eggplants. Finely or coarsely chop the vegetables as you like, then toss them with the tomatoes, parsley, olives, and dressing. Add the avocado last so that it doesn't end up mushy.
