Guest guest Posted February 16, 2001 Report Share Posted February 16, 2001 * Exported from MasterCook * Apple And Celery Salad With Gruyère Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 166 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Salads, Fruit Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 ounces Gruyère Salt and freshly milled pepper 1 tablespoon tarragon vinegar 1 small shallot -- finely diced 1 tablespoon walnut oil 1 tablespoon sour cream or mayonnaise 1 cup finely diced celery heart 2 crisp apples -- unpeeled and finely diced 1/3 cup chopped walnuts or hazelnuts -- roasted 2 tablespoons chopped parsley OR celery leaves or a mixture Dice the cheese into small cubes and put them in a large bowl. Season with a little salt and plenty of pepper. Cover and let stand at room temperature for 1 hour. Meanwhile, combine the vinegar, shallot, 1/8 teaspoon salt, and pepper to taste in another bowl and let, stand for 15 minutes. Whisk in the oil and sour cream, then taste for salt.
