Cajun Soynuts

Amount Measure Ingredient -- Preparation Method

1 pound dried soybeans

3 quarts cold water

 

FOR SPICE MIX

3/4 teaspoon lemon pepper

2 teaspoons sea salt

2 teaspoons granulated garlic

1 1/2 teaspoons dried basil

1 teaspoon onion powder

1 teaspoon thyme

1 teaspoon chili powder

1/2 teaspoon black pepper

cayenne pepper -- to taste

 

Rinse beans thoroughly, sort and discard any stones or debris. Place beans in a

large bowl and cover with cold water. Soak 3 to 4 hours.

 

Preheat oven to 350°F. Line two baking pans with foil and spray lightly with

cooking oil.

 

Drain the beans and place them on the prepared pans in a single layer. Place

the remaining ingredients in a small bowl and mix thoroughly. Spray the tops of

the soybeans lightly with oil and sprinkle spice mix evenly over beans. Bake 40

to 45 minutes, stirring occasionally until well browned. After nuts are

thoroughly cooled, cover and store them in the refrigerator.

Roasted soynuts make a great snack with one-third less fat than peanuts and a

full measure of phytochemicals.
