1 cup falafel mix

1 cup bouillon

Yogurt Dipping Sauce

(see separate recipe)

 

Falafel mix is made from ground chick peas and seasonings. It's in most

supermarkets in the grains section. Falafel patties are traditionally

fried, but you can bake bite-size portions instead.

 

Combine the falafel mix and the bouillon together in a bowl. Cover and

refrigerate at least 60 minutes.

 

When ready to serve, preheat the oven or toaster oven to 400F. Shape the

mixture into about 1/2-inch balls. Place on a foil-covered pan or baking

sheet and bake 10 to 15 minutes, or until lightly browned, dry and a little

crispy on the outside. Serve with Yogurt Dipping Sauce.

 

Yield: about 50, per 5 balls: calories: 100, fat: 2g, fiber: 4g.

Sauces And Marinades

 

Amount Measure Ingredient -- Preparation Method

1 cup plain fat-free yogurt

2 cloves garlic -- minced

1/4 cup fresh mint or cilantro leaves -- (optional)

1 cucumber -- peeled (optional)

seeded and grated or finely chopped

 

This dip keeps, refrigerated, for several days, and also makes a good salad

dressing.

 

Combine the yogurt, garlic and mint and/or cucumber, if desired. Let sit

at least 30 minutes to let the flavors blend.

 

Yield: 1 cup, per 1/8th cup: calories: 25, fat: 0g, fiber: 1g.
