Request: Bulger/Bulghur

 

Does anyone have recipes that use bulger (bulghur) wheat?

Burghul with Tomato (Lebanon)

 

Recipe By :Arabic Cookbook 1998

Amount Measure Ingredient -- Preparation Method

2 cups coarse bulgur -- rinsed and drained

1/2 cup finely chopped onion

1 tablespoon vegetable oil

2 pounds tomatoes -- peeled, roughly chopped

1 firm tomato -- for slicing

1 teaspoon salt

1/2 cup water

dash allspice

dash cinnamon

dash red pepper -- if desired

 

Fry onions with oil over low heat until soft.

 

Add chopped tomatoes, water, salt and spices and bring to a boil over medium

heat.

 

Add bulgur and more water if needed to cover.

 

Cook over medium heat for 10 minutes or until bulgur is cooked.

 

Meanwhile peel the extra tomato. Remove seeds. Slice into rings. Arrange around

the rim of a plate.

 

Mound the bulgur on top, covering the center half of the tomato rings. Serve

hot.
