I made some last week and discovered that they are better made with dark brown sugar than light brown sugar, as it is more moist. This is with Australian sugar, so this may vary a bit depending on what kind of sugar you have available. Jo. * Exported from MasterCook * Best-Ever Choc-Chip Cookies Recipe By :Janelle Bloom Serving Size : 24 Preparation Time :0:15 Categories : Baking Biscuits & Cookies Chocolate Sweet Tried Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 egg 1 c brown sugar 1 tsp vanilla essence 1/2 c canola oil 3/4 c self-raising flour 3/4 c plain flour 1 c chocolate chips Preheat the oven to 180ºC (350ºF). Grease 2 baking trays and line them with non-stick baking paper. Combine the egg, brown sugar, vanilla essence and oil in a large bowl. Sift in the flours and add the choc. chips, mixing until well combined. Roll 1 tablespoonful of the mixture into a ball. Repeat until all the dough is used. Place the balls on the prepared baking trays, then slightly flatten them with a fork. Place the cookies in the oven and bake for 12-14 minutes, or until golden in colour. Allow the cookies to stand on the trays for 5 minutes before transferring them to a wire rack to cool.
