Guest guest Posted March 6, 2001 Report Share Posted March 6, 2001 * Exported from MasterCook * Vegetarian Quiche Lorraine Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 9-inch pie shell OR 4 4-inch pie shells 1/4 cup soy Parmesan 1 3/4 cups soy milk 1/2 cup medium-firm tofu 1 chicken-style vegetarian bouillon cube -- crumbled OR enough broth powder for 1 cup liquid 1 1/2 tablespoons cornstarch or wheat starch, plus a pinch of Spanish saffron, or 1 tablespoon custard powder plus 1/2 tablespoon cornstarch 4 slices vegetarian ham or Canadian bacon, or about 8 slices vegetarian bacon 1/2 teaspoon agar powder or 1 tablespoon agar flakes 1/2 teaspoon salt pinch pepper pinch nutmeg Preheat the oven to 425F for a 9-inch quiche or 400F for individual quiches. Prick the crust all over, and bake for 5 minutes. Remove from the oven. Brown the ham or bacon in a nonstick pan. Slice it thinly and scatter over the bottom of the pastry. Note: the ham or bacon was supposed to be second on the ingredient list. Process the remaining ingredients in a blender until smooth, and pour into the crust. Bake for 10 minutes, then cover the edges of the pastry with strips of foil, and bake 20 minutes more. (Bake individual quiches at 400F for 25 minutes.) The quiche needs to be cooled at least to room temperature to be firm. It will keep well in the refrigerator for a few days.
