Guest guest Posted March 14, 2001 Report Share Posted March 14, 2001 * Exported from MasterCook * Tofu Chocolate Mousse Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup unbleached sugar 3 1/2 tablespoons strong coffee or espresso, coffee substitute, or water 4 1/2 tablespoons unsweetened Dutch cocoa 1 12.3 oz package firm or extra-firm silken tofu 1 1/4 teaspoons vanilla pinch salt 1 1/2 tablespoons rum. or coffee, chocolate, or other liquer, or flavored Italian syrup for coffees (optional) 1/4 teaspoon cinnamon (optional) Mix the sugar and coffee or water in a small saucepan, and stir over high heat until dissolved. Stir in the cocoa until a paste forms. Place this in a food processor or blender with the tofu, vanilla, salt, and the liqueur and cinnamon, if using, and process until very smooth. Pour into 4 pudding dishes or goblets, cover, and chill for several hours. For a richer version or a rich pie filling, add 1/2 cup melted semisweet nondairy chocolate chips to the processed mixture. Frozen Chocolate Tofulato: Double the recipe for the basic version, and add 1 cup melted semisweet nondairy chocolate chips and 1/2 cup plus 2 tablespoons soymilk. Chill. Follow the directions for your ice cream maker. Fudgesicles: Omit the coffee and liqueur, and use 6 tablespoons water. Use only 3 tablespoons cocoa. Freeze the mixture in popsicle molds. Chocolate Tofu Cream Pie: Double the recipe for the basic version, using extra-firm silken tofu, and add 1 cup melted semisweet nondairy chocolate chips. Spread the mixture in a prepaked, cooled 9-inch crust. Chill thoroughly and top with your favorite nondairy whipped topping. For Choclate-Banana Cream Pie, place sliced bananas over the crust, spread on half the mousse, add another layer of bananas, and then spred on the remaining mousse.
