Guest guest Posted March 17, 2001 Report Share Posted March 17, 2001 * Exported from MasterCook * High-Calcium Spinach Salad Recipe By :Jeanne Jones: Eating of the Green Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Dressing: 1 tablespoon balsamic vinegar 2 tablespoons blackstrap molasses 2 tablespoons water 1 tablespoon extra-virgin olive oil 3/4 teaspoon Dijon-style mustard Salad: 1/4 cup chopped raw almonds 6 ounces washed fresh baby spinach leaves -- torn in bite-size pcs OR 8 cups loosely packed spinach 1/2 cup crumbled feta cheese 1/2 cup chopped dried black mission figs 1 cup peeled and diced pear -- (1 large) Combine all of the dressing ingredients in a small bowl and mix well. Set aside. Place all of the salad ingredients in a large bowl and toss well. Add the dressing and again toss well. Serve immediately. Makes 4 servings: Each 2-cup serving contains approximately 260 calories, 12 grams fat, 13 milligrams cholesterol, 268 milligrams sodium, 336 milligrams calcium, 36 grams carbohydrates, 8 grams protein, 7 grams fiber. It is decidedly green enough to be perfect for a St. Patrick's Day party, but all of the ingredients are available year round. Also, the healthy, high-calcium ingredients make it a good choice for adding additional calcium to your weekly menus. You can add leftover fish, poultry, meat or tofu and turn it into an economical entree. For an even higher-calcium main dish, you can top the salad with drained canned salmon. Nutr.
