Guest guest
This is a very easy cake that I tried on the weekend. It is very moist and dense. It's from a book by a TV cook from New Zealand. I saw her make the cake in the first episode of her show 'Real Food for Real People' that I saw. It was on cable TV in Australia. This is definitely worth trying. Add the lemon juice then the butter and mix until creamy. Add the eggs and mix well. Mix in the yoghurt, fruit, nuts, flour, baking powder and cinnamon - don't overmix, just combine loosely. Pour into a well-greased and baking-paper-lined 21cm cake tin. Bake at 180ºC for 55-60 minutes. Cool on a wire rack. Serve dusted with icing sugar and extra fruit-flavoured yoghurt or softly whipped cream. Great for afternoon tea or as a special dessert. Jo's note: This might be better in a 23cm tin (it filled the 21cm tin even before it was cooked). Nutr.
