Guest guest Posted March 25, 2001 Report Share Posted March 25, 2001 * Exported from MasterCook * Baba Ghanoush Recipe By :Vegetarian Planet, Didi Emmons Serving Size : 0 Preparation Time :0:00 Categories : Vegetarian Planet Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large firm eggplant -- (about 1 1/3 pounds) 1 1/2 tablespoons tahini 1 large clove garlic -- minced 1/3 cup minced shallots or onion 1/4 cup fresh lemon juice 2 tablespoons extra virgin olive oil 1/2 teaspoon salt -- or more to taste 1/4 teaspoon freshly ground black pepper -- or to taste 3 tablespoons chopped cilantro Grill or roast the eggplant. To grill it, bring a gas grill to medium heat or prepare a medium hot charcoal fire. Prick the eggplant all over with a fork, then cut it in half lengthwise. Lay the eggplant halves on the grill cut side down, and let them cook for 20 minutes. Then turn the eggplant halves over, and grill them an additional 5 minutes. The eggplant should be soft and sagging a bit. To roast the eggplant: Preheat oven to 375ºF. Cut the eggplant in half lengthwise and place the halves in a roasting pan cut side down. Bake them 30 minutes or until they are soft. Transfer the eggplant to a plate and let it cool. In a large bowl, mix the tahini, garlic, shallots or onion, lemon juice, olive oil, salt & pepper, and cilantro. Spoon the eggplant flesh onto a cutting surface and mince the eggplant. Add it to the bowl, stir, and correct the seasoning, adding a bit more lemon juice, salt, or pepper as needed. You can use the Baba Ghanoush immediately, but I like to chill it for an hour or two first. It will keep in the refrigerator, covered, for up to 4 days.
