Spicy Wehani with Cashews

Amount Measure Ingredient -- Preparation Method

1 1/2 tablespoons olive or canola oil -- may double

2 teaspoons cumin seed

1/4 teaspoon ground cloves

1 bay leaf

1/4 teaspoon red pepper flakes

1 small onion -- minced

2 garlic cloves -- minced

1 cup Lundberg Wehani -- uncooked

1/2 teaspoon salt

1/3 cup roasted cashews -- chopped

 

Heat the oil in large, heavy saucepan with a tight-fitting lid. Add the cumin

seed, cloves and bay leaf, stirring for about 10 seconds. Add the red pepper,

onion, and garlic, and continue to cook, stirring until the onion is softened.

 

Stir in Wehani until thoroughly coated, about two minutes. Add 2-1/4 cups hot

tap water and salt. Bring mixture to a boil. Reduce heat to low and simmer,

covered, for about 45 minutes. Do not remove lid during this time.

 

Remove from heat, let sit covered, for 15 minutes. Remove bay leaf, stir in

cashews, and serve.
