Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 ounces dried shiitake mushroom caps

3 cups vegetable oil

Soak mushrooms in hot water for 1 hour. Strain the mushrooms, pat them dry,

slice them, and transfer to a pan. Add the oil and heat the mixture until it is

warm to the touch. Pour the oil and mushrooms into a glass or plastic

container. Let the oil stand uncovered for 2 hours, then cover it and chill it

for at least 24 hours. It keeps for up to one month, refrigerated.

Try the oil drizzled on pasta or pizza, or add it to cooked grains, or seared

greens. The aroma is intoxicating.

Description:

" My friend Tom Tenuta came up with this way to flavor oil with

shiitake mushrooms. "
