Spicy Peanut Soup

2 tablespoons oil

1 large onion -- finely chopped

2 garlic cloves -- crushed

1 teaspoon mild chili powder

2 red bell peppers -- seeded and finely chopped

8 ounces carrots -- finely chopped

8 ounces potatoes -- peeled and cubed

3 celery stalks -- sliced

3 3/4 cups vegetable stock

6 tablespoons crunchy peanut butter

2/3 cup corn

salt and freshly ground black pepper

roughly chopped unsalted roasted peanuts,

to garnish

 

Heat the oil in a large pan and cook the onion and garlic for about 3 minutes.

Add the chili powder and cook for another minute.

 

Add the peppers, carrots, potatoes, and celery to the pan. Stir well, then

cook for another 4 minutes, stirring occasionally.

 

Stir in the stock, peanut butter, and corn until combined.

 

Season well. Bring to a boil, cover, and simmer for 20 minutes or until all the

vegetables are tender. Adjust the seasoning before serving, and sprinkle with

the chopped roasted peanuts, to garnish.
