I like my Tofu dry. So I continued cooking the Barbecued Tofu (after the 1

hour cooking time), at 400F for another 30 minutes, turning the pieces every

10 minutes.

> 2 pounds extra-firm tofu

> 2 teaspoons salt

> 2 tablespoons sugar

> 2 teaspoons freshly ground black pepper

> 1/2 teaspoon cayenne

> 1 tablespoon chili powder

> 2 tablespoons paprika

> 1 cup apple cider vinegar

> 2 large garlic cloves -- minced

> Preheat the oven to 300F. Cut the tofu into 1/4-inch cubes.

> Combine the tofu with the rest of the ingredients in a bowl, and stir

well. Place the tofu and its marinade in a large low-sided roasting pan,

and bake it in the oven for 1 hour. Toss the tofu once or twice during the

baking. Serve it hot.
