Eggless Matzoh Balls (Kneidlich)

4 medium russet potatoes

1 cup matzoh meal -- (to 1 1/4 cup)

salt pepper to taste

water or vegetarian broth

 

Peel, cut up and boil potatoes until soft. Drain and mash; season to taste. Add

matzoh meal gradually and knead until firm and smooth.

 

Fill a large pot 3/4 full of water. Heat to a boil. Form smooth balls of the

mixture and drop into the boiling water (or broth). Cook for about 20 minutes,

covered. Do not overcook. serve in your favorite soup or broth.

 

Yield:

" 10 balls "
