Guest guest Posted April 4, 2001 Report Share Posted April 4, 2001 I'm posting some salad dressings that use this. * Exported from MasterCook * Oil Substitute for Salad Dressing Recipe By :The (Almost) No Fat Cookbook - Bryanna Clark Grogan Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup cold water or light vegetarian broth 2 teaspoons cornstarch Mix liquid together with cornstarch in a small saucepan. Cook, stirring constantly, over high heat until thickened and clear. Description: " Use this in place of the oil in your favorite dressing; (it will thicken further when chilled). " Yield: " 1 cup " - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 20 Calories; trace Fat (0.1% calories from fat); trace Protein; 5g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; trace Sodium. Since we don't use oil or butter in our house (Ornich program) I'm always looking for substitutes. Jennifer Raymond, in The Peaceful Palate, suggests using Seasoned Rice Wine as an oil sub in appropriate recipes, which I've tried with good success.
