Guest guest Posted April 6, 2001 Report Share Posted April 6, 2001 * Exported from MasterCook * Cauliflower Soup (Dairy Free) Recipe By :Lindsay Wagner and Ariane Spade Serving Size : 4 Preparation Time :0:00 Categories : Kitpath New Import Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon cold-pressed olive oil 1 onion -- chopped 3 garlic cloves -- thinly sliced 4 cups vegetable stock or broth 1 cauliflower -- broken into florets, stem diced 1 cup mild soy milk 1/8 teaspoon pepper salt -- to taste 1 tablespoon chopped parsley or chives -- to garnish croutons (optional) 1. Heat the oil in a large skillet. Add the onion and cook slowly for about 10 minutes until they are translucent. Do not allow the onions to brown. Turn up the heat just a little, add the garlic, and cook for 1 minute. Add the stock, cauliflower, soy milk, pepper, and salt and simmer, covered, for 45 minutes. 2. Put three-fourths of the soup into a blender and pur and until very creamy. Return the creamed soup to the skillet. Heat before serving. Garnish with a sprinkling of chopped parsley or chopped chives. Some croutons added to each bowl when serving gives a pleasant crunch.
