Guest guest Posted April 17, 2001 Report Share Posted April 17, 2001 * Exported from MasterCook * Mixed Vegetable Stir-Fry with Coconut-Basil Sauce Recipe By :Vegetarian Cooking for Everyone, Deborah Madison Serving Size : 4 Preparation Time :0:00 Categories : Vegetable Stews & Stir-Fries Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound vegetables--fresh mushrooms, quartered; carrots, roll cut; asparagus, sliced diagonally; snow peas or string beans, trimmed; jicama or water chestnuts, sliced 6 dried Chinese black or shiitake mushrooms -- (to 10) 1 bok choy -- stems sliced & leaves whole 3 cloves garlic 2 tablespoons seeded and diced jalapenos 1 stem lemongrass, minced or 1/2 teaspoon finely grated lemon zest 1/2 teaspoon finely grated lime zest 1 15 oz can unsweetened coconut milk salt 1 teaspoon red pepper flakes 1 tablespoon soy sauce 1 tablespoon fresh lime juice 10 large basil leaves -- finely sliced Parboil the harder vegetables (carrots, asparagus, string beans) one at a time in salted water until tender, then cool. Soak the dried mushrooms in 1/2 cup warm water until soft. Reserve the water, discard the stems, and slice the caps in half or into strips. In a mortar or small food processor, make a paste of the garlic, chiles, lemongrass, and zest. Heat a wok, add the coconut milk and paste, and simmer for 1 minute. Add the vegetables and the reserved mushroom water. Season lightly with salt, then add the pepper flakes and simmer for 5 minutes.
