Seitan Bordelaise

Amount Measure Ingredient -- Preparation Method

1 cup vegetable stock

1 cup dry red wine

2 tablespoons corn oil

1 pound seitan -- cut into 1/4-inch slices

1/2 teaspoon salt

1/2 teaspoon minced fresh thyme

or

1/4 teaspoon dried thyme

1/8 teaspoon freshly ground black pepper

1 medium onion -- thinly sliced

1 cup sliced mushrooms

 

Place stock and wine in a saucepan over high heat and boil until reduced by

half. Remove from heat and set aside.

 

Heat oil in a large skillet over medium-high heat. Add sices if seitan and

season with salt, thyme, and pepper. Saute 2 minutes, or until browned on each

side. Remove seitan from skillet and keep warm. Add onions to skillet and cook

for 3 to 5 minutes; then add mushrooms, reduce heat, add reserved wine

reduction, and simmer until liquid is further reduced to a saucelike

consistency. Adjust seasonings. Add seitan slices to sauce and heat through.
