Guest guest Posted April 19, 2001 Report Share Posted April 19, 2001 I'm on a seitan kick (in case it went unnoticed) * Exported from MasterCook * Seitan Bordelaise Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup vegetable stock 1 cup dry red wine 2 tablespoons corn oil 1 pound seitan -- cut into 1/4-inch slices 1/2 teaspoon salt 1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme 1/8 teaspoon freshly ground black pepper 1 medium onion -- thinly sliced 1 cup sliced mushrooms Place stock and wine in a saucepan over high heat and boil until reduced by half. Remove from heat and set aside. Heat oil in a large skillet over medium-high heat. Add sices if seitan and season with salt, thyme, and pepper. Saute 2 minutes, or until browned on each side. Remove seitan from skillet and keep warm. Add onions to skillet and cook for 3 to 5 minutes; then add mushrooms, reduce heat, add reserved wine reduction, and simmer until liquid is further reduced to a saucelike consistency.
