Guest guest Posted April 19, 2001 Report Share Posted April 19, 2001 I made this a while ago, it turned out good but I've been using White Wave's Chicken-Style Seitan in everything I've tried so far because my local health food store doesn't keep seitan in stock, but they ordered this for me and they only had to order 6 - other types were a minimum of 12, I do have a box for making seitan quickly (made by Fantastic, I think), but so far have taken the easiest way. * Exported from MasterCook * Seitan with Portobello Mushrooms and Red Wine Sauce Recipe By :Robin Robertson, 366 Healthful Ways to Cook Tofu and other Meat Alternatives Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons olive oil 1/2 pound Portobello mushrooms -- sliced salt and freshly ground black pepper 1 pound seitan -- cut into 1/4-inch slices 2 shallots -- minced 1 cup red wine 1/4 cup minced fresh parsley Heat 1 tablespoon of the oil in a large skillet and saute mushrooms over medium-high heat, stirring, until mushroom liquid is almost evaporated, about 3 minutes. Season to taste with salt and pepper and set aside on a plate. Heat remaining 2 tablespoons olive oil in the skillet and saute seitan over medium-high heat until seared on both sides, about 2 minutes total. Season with salt and pepper. Lower heat to medium and cook, turning once, about 2 more minutes. Put seitan on a warm serving platter and keep warm. Saute shallots in the same skillet until soft, about 3 minutes. Add wine and scrape up any browned bits. Bring to a boil and reduce to a thick, syrupy sauce, about 2 minutes. Stir in parsley and sauteed mushrooms. Season to taste with salt and pepper. Top seitan with the sauce and serve immediately. Description: " Some say the meaty Portobello mushrooms taste like filet mignon.
