Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 * Exported from MasterCook * Chermoula (Moroccan Green Sauce) Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 56 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 garlic cloves -- coarsely chopped Salt 2/3 cup finely chopped cilantro 1/3 cup finely chopped parsley 1 1/2 teaspoons sweet paprika 1/2 teaspoon ground cumin 1/8 teaspoon cayenne 1/4 cup extra virgin olive oil 2 large lemons or to taste -- Juice of MAKES ABOUT 3/4 CUP The Moroccan marinade for fish is also wonderful with vegetables - especially sweet ones like beets, carrots, and winter squash. Pound the garlic with 1 teaspoon salt in a mortar until smooth. Add the cilantro and parsley and pound a little more to bruise the leaves and release their flavor.
