TIME TO PREPARE: 20 minutes COOKING TIME: 12 to 15 minutes EQUIPMENT: ovenproof griddle (optional) A combination quick bread and yeast bread with the convenience of one and the flavor of the other. Cottage cheese fortifies these rolls with calcium, and makes them luscious and light. In a small mixing bowl, dissolve the yeast in the warm water, about 1 minute. In a large mixing bowl, stir together the whole wheat flour, all-purpose flour, salt, baking powder, and baking soda with a long-tined fork or a wire whisk. In a food processor or blender, blend together the cottage cheese, lemon juice, and yogurt until smooth. Add the yeast mixture and the yogurt mixture to the flour mixture, and stir until you have a stiff dough. Knead it in the bowl until Its smooth, about 3 minutes. Turn the dough out onto a lightly floured board and roll to a thickness of about 1/2 inch. Cut it into rounds with a 3-inch biscuit cutter. Gather up the scraps of dough, if there are any, roll it out again, and cut more rounds. Transfer the rolls to an ungreased baking sheet or ovenproof griddle. Cover with a cloth napkin or lightweight towel and let them rest for 1 hour. Meanwhile, heat the oven to 450F. Bake the rolls for 12 to 15 minutes, until golden brown. Serve right away, or cool on a wire rack. Per serving (1 roll): calories 123.
