SMOKED TOFU WITH GREEN BEANS AND TAMARI ALMONDS

Amount Measure Ingredient -- Preparation Method

1/4 pound fresh crimini or shiitake mushrooms -- stems discarded,

sliced

1 tablespoon peanut or other vegetab)e oil

1/2 pound thin green beans -- ends trimmed

1 cup vegetable stock

7 ounces smoked tofu -- cut into 1/2-inch

cubes

1 tablespoon tamari or soy sauce

2 green onions -- thinly sliced

1/2 cup Tamari-Roasted Almonds -- coarsely chopped or

smoked almonds(recipe follows)

 

1. In a wok or high-sided skillet over high heat,

saute mushrooms in oil until browned and

juices have evaporated, 3 to 5 minutes. Add

green beans and saute 1 minute.

2. Reduce heat to medium. Stir in stock, cover,

and simmer 4 minutes, until beans are tender-

crisp. Stir in tofu and simmer 3 minutes,

Remove from heat and toss with tamari, green

onions, and almonds.

TAMARI-ROASTED ALMONDS

 

1 pound whole raw almonds

3 tablespoons tamari or soy sauce

 

Preheat oven to 350°, On a baking

sheet, spread almonds in an even layer.

Toast for 10 to 12 minutes, stirring

occasionally. Remove from oven,

sprinkle almonds with tamari; toss to

mix. Roast 5 more minutes. Remove

from oven and allow to cool.
