BRAISED VEGETABLES IN SIMPLE MOLE (Verduras en Mole)

Amount Measure Ingredient -- Preparation Method

1 small onion -- minced or grated

2 tablespoons olive oil

l-1/2tablespoons mild chile powder or

paprika

2 tablespoons coriander seeds -- toasted and ground,

or 2 teaspoons ground coriander

2 ounces bittersweet chocolate -- chopped

2 tablespoons peanut butter -- almond butter, or

tahini (optional)

1 ear corn -- cut in 3/4-inch

rounds

1 red bell pepper -- seeded and chopped

2 cups vegetable stock

1/2 teaspoon each -- ground allspice and

cinnamon

1/2 pound green beans -- stemmed and halved

crosswise

1/2 pound zucchini -- sliced

l-1/2 cups drained -- cooked black beans

Salt -- to taste

 

1. In a deep skillet over medium-high

heat, saute onions in oil until soft, about

3 minutes. Stir in chile powder and

coriander, and saute 1 minute.

2. Stir in chocolate and peanut butter, if

using. Add corn and pepper, and cook

for 2 minutes. Add stock, bring to a

boil, and reduce heat to simmer. Stir in

allspice and cinnamon. Cover and sim-

mer for 5 minutes.

3. Add green beans and simmer 5 min-

utes. Stir in zucchini and simmer 3 to 5

minutes more, until vegetables are tender.

Stir in beans and sprinkle with salt. Bring

to a simmer, and serve hot.
