Tofu Casserole

Amount Measure Ingredient -- Preparation Method

2 tablespoons oil

1 onion -- chopped

1/2 pound mushrooms -- chopped

1/2 pound zucchini -- chopped

1 carrot -- chopped

20 ounces frozen spinach

(2 10-ounce boxes )

1 teaspoon salt -- (optional)

1 teaspoon garlic powder

1 1/2 pounds tofu -- crumbled

1/2 cup nutritional yeast

 

(Serves 6)

 

Sauté onion, mushrooms, zucchini, and carrot in oil over medium-high heat

for 5 minutes. Add spinach and spices. Heat 10 minutes longer, stirring

occasionally. Mix vegetables with crumbled tofu and yeast and continue

heating for 5 minutes. Press into a casserole dish and serve warm.

 

Total calories per serving: 199, total fat as % of daily value: 15%,

Protein: 17gm, carbohydrates: 17gm, fat: 10gm, Calcium: 279mg, iron: 9 mg,

sodium: 108 mg, dietary fiber: 6gm
