Guest guest Posted May 12, 2001 Report Share Posted May 12, 2001 * Exported from MasterCook * Tofu Casserole Recipe By : Simply Vegan by Debra Wasserman, page 105 Serving Size : 6 Preparation Time :0:00 Categories : Soyfoods Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons oil 1 onion -- chopped 1/2 pound mushrooms -- chopped 1/2 pound zucchini -- chopped 1 carrot -- chopped 20 ounces frozen spinach (2 10-ounce boxes ) 1 teaspoon salt -- (optional) 1 teaspoon garlic powder 1 1/2 pounds tofu -- crumbled 1/2 cup nutritional yeast (Serves 6) Sauté onion, mushrooms, zucchini, and carrot in oil over medium-high heat for 5 minutes. Add spinach and spices. Heat 10 minutes longer, stirring occasionally. Mix vegetables with crumbled tofu and yeast and continue heating for 5 minutes. Press into a casserole dish and serve warm.
