Cabbage Soup (Fix It and Forget It)

1/2 head cabbage -- sliced thin

2 ribs celery -- sliced thin

2 carrots -- (to 3) sliced thin

1 onion -- chopped

2 vegetarian bouillon cubes

2 cloves garlic -- minced

1 quart tomato juice

1 teaspoon salt

1/4 teaspoon pepper

water

 

Combine all ingredients except water in slow cooker. Add water to within 3

inches of top of slow cooker.

 

Cover and cook on high for 3 1/2 to 4 hours or until vegetables are tender.
