Guest guest Posted May 25, 2001 Report Share Posted May 25, 2001 * Exported from MasterCook * Black Bean and Artichoke Salad Recipe By :Cooking Pleasures (Magazine) 2001-06/07 Serving Size : 4 Preparation Time :0:00 Categories : Beans Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 15-oz cans black beans -- rinsed and drained 1 14-oz can artichoke hearts -- drained and chopped 1 cup chopped tomato 1/2 cup chopped red bell pepper 1/2 cup finely chopped red onion 2 tablespoons chopped fresh cilantro 1 jalapeno chile pepper -- finely chopped 1/3 cup vegetable oil 3 tablespoons white vinegar romaine or escarole leaves 1. In a large bowl, combine beans, artichoke hearts, tomatoes, bell pepper, onion, cilantro and jalapeno; mix well. 2. In a small bowl, combine oil and vinegar, blend well. Stir into salad. Arrange greens on platter; spoon salad over greens.
